Pulled Chicken Soft Tacos

OK, so recently I have fallen in LOVE with a restaurant called Bartaco! Whether it is the amazing food or the trendy beachy atmosphere I can’t seem to get enough.

Of course I can’t go everyday because I think the waiters will think I am insane! So i decided to bring Bartaco home! I put myself to the task of recreating my favorite chicken taco.

It was much simpler than I thought and tasted pretty darn good! These tacos are perfect for those warm summer nights where you just want something more! They have a ton of flavor and are perfect for a Mexican barbecue!




what you will need:

2 boneless, skinless chicken breasts (i used 3, big family!)
1 Bay leaf
Kosher salt and freshly cracked black pepper
1 tablespoon extra-virgin olive oil
1 small yellow onion chopped
1 clove garlic, minced
2 tablespoons tomato paste
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon ground coriander
1 lime, halved (and cut one of the halves into wedges)
12 small corn tortillas
avocado, diced

store bought guacamole (or feel free to make your own)
tomatoes, chopped ( I used cherry tomatoes)


Put chicken in a saucepan and cover with 2 inches of water. Add a bay leaf and a healthy pinch of salt. Bring it all to a boil and then reduce to a simmer until chicken is cooked through. Chicken should be cooked to about 160º, use meat thermometer to check but make sure you remove the chicken from the water to check. Once ready remove the chicken, but keep the cooking liquid, and let cool slightly. Shred the chicken with 2 forks and set aside.

Heat oil in a large, non-stick skillet over medium-high heat. Add the onion and garlic and sauté for a few minutes, until soft. Then add the tomato paste, cumin, smoked paprika, coriander, and shredded chicken and stir. Feel free to add some salt and pepper to enhance the flavor. Then add the juice of half of the lime. If the chicken is dry, add a few tablespoons of the reserved cooking liquid (I ended up adding 4 tablespoons). Continue to stir to make sure the chicken is evenly covered in the seasoning.

Once ready to serve, warm the tortillas by putting them on a microwave safe plate then cover with a damp paper towel. If you want a bit more flavor put the tortillas on the grill!

Then assemble you taco! Placing the chicken on the tortilla then add avocado and tomatoes. to top it off add a dollop of guacamole and a squeeze of a lime!!
