Summer Skinny Berry Crisp
Hi Hi, ok so sorry I have been distant these past few days! Let’s just say I have been enjoying the beginning of summer and the sunshine 🙂
So if you are like me you always crave something sweet, but you constantly have a busy schedule that prevents you from making a batch of cookies or other treats. Have no fear a Summer Crisp is here! Oh and its skinny!
This dish is perfect for a summer barbecue. It’s super easy, super sweet, and healthy!
What you will need:
3 cups of fresh mixed berries
1 cup almond meal
½ cup oats
½ tsp cinnamon
¼ tsp salt
3 tbsp coconut oil (put in the microwave for about 15 sec to melt)
3 tbsp honey
2 tbsp brown sugar
What to do:
This recipe is very easy! Pre-heat the oven to 350º. First grease an 8×8 pan – pyyrex dish is recommended. I doubled the recipe and used a 13×9 Pyrex dish. Once pan is greased fill it with washed berries.
Next mix all the ingredients in a medium-sized bowl. Use your hands to combine everything. Continue to mix until the crumble resembles something like cookie dough. Then spread evenly on top of the berries.
Bake the Crisp for about 35 min until the top is brown and crispy! I served mine with vanilla bean ice cream.
