Hi Hi! Hope everyone had a good start to their week! I know sometimes Mondays can be a kick in the butt.. So here is a recipe that will hopefully satisfy the beginning of the week blues.
If you are like me you constantly crave carbs! I have to admit that it can be very hard to maintain a healthy diet when all you want is that Starbucks pound cake or coffee cake muffin.
Have no fret! Here is a simple recipe that will satisfy that craving! It is a guilt free small snack, perfect to grab on the go as you head outthe door in the morning!
What you will need:
- 2 Tablespoons butter
- 1 egg
- ⅔ cup plain yogurt (whole milk or 2%)
- 1 teaspoon vanilla extract
- ¾ cup white whole wheat flour
- ¾ cup rolled oats
- ⅓ cup sugar
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon cinnamon
- ⅔ cup fresh blueberries
- Sugar for sprinkling (optional)
What to do:
First things first, preheat the oven to 350º F. Then slightly grease a muffin tin or use muffin tin liners.
Next melt the butter in the microwave (less than 30 sec, just watch it). In a medium size bowl combine egg, yogurt, butter and vanilla. Mix until everything in incorporated together.
In a different bowl mix flour, oats, sugar, baking powder, baking soda, and cinnamon. Continue to stir until they are well combined.
Finally combine the wet ingredients, with the dry. Once the ingredients are all well mixed together fold in the blueberries. Then fill the muffin tins with ample and equal amounts of batter! If you would like you can press a few blueberries into the tops of the muffins and then sprinkle with sugar (that is highly optional!)
Bake for 25 min until a toothpick inserted into the center of a muffin comes out clean! Let the baked muffins sit for 15 to cool then remove from the pan and place on a drying rack.
